Gary's Pancakes

This recipe produces light and fluffy pancakes to die for. Commercial mixes produce rubbery plastic tasting excuses for pancakes. There should be no excuse for serving these when making your own from scratch is soooo easy!  

INGREDIENTS:
  • 2c. whole wheat flour
  • 1/2 tsp salt
  • 2 cups water
  • 2 tb honey
  • 2 tsp baking powder
  • 3 eggs
  • 2 tb oil

MIX dry ingredients together

SEPARATE yolks into a small bowl and whites into a large bowl. Beat the eggwhites until stiff.

BEAT the egg yolks. Add water, yolks, oil and honey together.

IN a large bowl add slowly the wet ingredients to the dry ingredients, mixing until all the lumps are gone. Fold egg whites into mixture.

HEAT frying pan with 1 tb oil at med. heat. When pan is hot, ladle mixture into pan to make saucer-sized pancakes.

FLIP  pancakes when they start to bubble all over. Cook until bottom is just turning golden.
