INGREDIENTS:
- 1/4 c. butter
- 1 large onion, sliced
- 4-5 medium potatoes, sliced
- 1 stalk celery with leaves
- 4-6 cups of water or vegetable
stock
- salt and pepper to taste
IN a
large soup pot, heat butter on a low heart. Add
onions and cook for 5 mins or until soft.
ADD potatoes,
water and celery. Bring to a boil then lower to a
simmer and cook for 20 to 20 mins.
SEASON with
salt and pepper to taste.
PUREE in
a blender in small batches.
