Rice Cakes

A  healthy alternative to pancakes. Kids just can't eat enough of them!  

INGREDIENTS:
  • 2 eggs
  • 1 3/4 c. of cooked brown rice
  • 3 tb. wheat germ
  • 1/4 tsp. salt

BEAT  eggs slightly. Add ingredients and mix.

HEAT  frying pan or griddle to a med. heat.

ADD 1 tb. butter. Drop batter by tablespoon into hot butter.

FLATTEN with back of spoon so cakes will be thin. When crisp and golden (about 4 mins.), turn cakes over and cook other side.

SERVE with honey.
