INGREDIENTS:
- 1/2 c. canola oil
- 5 med. potatoes, diced into very
small pieces
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. paprika
- 1 c. water
- 5 eggs, beaten
IN
a frying pan, heat oil over med. heat. When hot
add potatoes, salt, pepper, paprika and water.
COOK
until potatoes are tender but still slightly firm.
Pour eggs over potatoes and turn heat to very low.
COOK without
stirring for about 5 minutes or until eggs are
cooked.
SERVES 4.
